Ingredients
- 3 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup poppy seeds
- finely grated zest of 3 lemons
- 1 cup unsalted butter
- 2 1/4 cups granulated sugar
- 3 large eggs
- 2 tbsp water
- 2 tbsp granulated sugar
- 2 tsp fresh lemon juice
- about 1 cup confectioners' sugar
- 2 tbsp fresh lemon juice
Steps
- Heat the oven to 350 F and grease a 10-inch tube pan.
- Whisk the flour, baking soda, salt, and poppy seeds in a medium bowl.
- Stir the buttermilk, lemon zest, and 2 tablespoons lemon juice in a small bowl.
- Beat the butter and 2 1/4 cups sugar until light, then beat in the eggs one at a time.
- Add the flour mixture and buttermilk mixture in alternating additions, then spread the batter in the pan.
- Bake for 50 to 55 minutes, until a toothpick comes out clean, and cool for 15 minutes.
- Simmer the water, 2 tablespoons sugar, and 2 teaspoons lemon juice for 2 minutes, brush it over the warm cake, then drizzle with confectioners' sugar mixed with the remaining lemon juice.
