Ingredients
- 340 g unsalted butter softened
- 340 g caster sugar
- 6 large eggs
- 1 tsp vanilla extract
- 340 g self-raising flour
- 1 tsp baking powder
- 2 tbsp milk
- 400 g caramel or lemon curd
- 5 egg whites
- 375 g caster sugar
- 500 g unsalted butter cubed and softened
- 3 tsp vanilla extract
Steps
- Heat the oven to 350 F and grease six 8-inch round cake pans.
- Beat the softened butter and sugar, then beat in the eggs and vanilla until smooth.
- Stir in the flour and baking powder, then mix in the milk.
- Divide the batter among six bowls, tint each with a different food coloring gel, and spread it into the pans.
- Bake for 18 to 20 minutes, then cool the cakes completely on racks.
- Heat the egg whites and sugar over simmering water to 160 F, whip until firm, and beat in the butter and vanilla.
- Stack the cakes with curd between the layers, then cover the cake with the buttercream.
