Ingredients
- 4 strips bacon
- 8 quail
- 1 cup shredded carrots
- 1/2 cup sliced green onions
- 1/2 cup minced fresh parsley
- 1 1/4 cups chicken broth
- 1 cup uncooked long grain rice
- 1/2 tsp salt
- 1/4 tsp lemon-pepper seasoning
Steps
- Cook the bacon in a 12-inch covered skillet over medium heat for 5 minutes, then remove it and leave the fat in the skillet.
- Season the quail with salt and lemon-pepper seasoning, then brown them in the skillet for 5 minutes.
- Stir in the carrots, green onions, parsley, chicken broth, rice, and cooked bacon.
- Cover the skillet and simmer over low heat for 20 minutes, until the rice is tender.
- Check that the quail reaches 165 F, then rest the covered skillet for 5 minutes.
