Ingredients
- 1 1/2 kg beef brisket
- 1 bunch carrots
- 1 celeriac
- 2 parsnips
- sprigs of fresh parsley
- 1/2 leek
- 1 large onion
- 2 bay leaf
- 5 peppercorns
- 1 pinch salt
Steps
- Cut the carrots, celeriac, parsnips, leek, and onion into large pieces.
- Place the brisket, vegetables, parsley, bay leaves, peppercorns, salt, and water in a large pressure cooker.
- Seal the cooker and cook at high pressure for 30 minutes.
- Let the pressure release naturally for 10 minutes, then release any remaining pressure.
- Check that the beef is tender, slice it, and return it to the hot broth for 5 minutes.
