Ingredients
- 4 1/2 lb beef brisket
- 1 dash salt
- 3 onion
- 5 cloves garlic
- 1 sprig thyme
- 1 sprig rosemary
- 4 bay leaves
- 2 cups beef stock
- 3 large carrots
- 1 tbsp mustard
- 4 mashed potatoes
Steps
- Heat the oven to 425 F, slice the brisket into 1-inch pieces, and season with salt.
- Arrange the brisket, onions, garlic, thyme, rosemary, and bay leaves in a deep roasting pan.
- Whisk the beef stock with the mustard, pour it over the meat, and cover the pan tightly.
- Roast for 30 minutes, then add the carrots and roast uncovered for 10 minutes.
- Rest the beef for 5 minutes, then check that the thickest piece reaches 145 F and serve with the mashed potatoes.
