Ingredients
- 4 boneless pork chops
- 1 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups plain breadcrumbs
- 4 tbsp vegetable oil

Steps
- Pound the pork chops to about 1/4-inch thickness, then season both sides with salt and pepper.
- Place the flour, beaten eggs, and breadcrumbs in three separate shallow dishes.
- Coat each chop in flour, egg, and breadcrumbs.
- Heat the oil in a 12-inch skillet over medium heat.
- Fry the chops in batches for 3 to 4 minutes per side, until golden and at least 145 F inside.
- Serve the schnitzel with lemon wedges if desired.
