Ingredients

  • 4 serving-size pork loin chops
  • salt and pepper
  • 4 tbsp butter
  • peanut oil or vegetable oil (optional)
  • 1/2 cup unbleached all-purpose flour
  • 1 cup plain breadcrumbs
  • 2 eggs
  • lemon slices and fresh parsley

Steps

  1. Pound the pork chops to about 1/4-inch thickness and season both sides with salt and pepper.
  2. Place the flour, beaten eggs, and breadcrumbs in three separate shallow dishes.
  3. Coat each chop in flour, egg, and breadcrumbs, pressing gently so the crumbs stick.
  4. Heat the butter and oil in a large skillet over medium-high heat until the butter foams.
  5. Fry the schnitzels for 2 to 3 minutes per side, adding more butter or oil as needed, until golden and 145 F inside.
  6. Drain briefly and serve with lemon slices and parsley.
