Ingredients
- 1 1/2 cups all-purpose flour
- 2 tsp cornstarch
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 2 large eggs
- 2/3 cup milk
- green food coloring
- 1/2 cup unsalted pistachios
- 3/4 cup butter
- 1 1/2 tbsp heavy cream (optional)
- 2 3/4 cups powdered sugar
- 1/4 cup unsalted pistachios (optional)
Steps
- Heat the oven to 350 F and line a 12-cup muffin pan with paper liners.
- Whisk the flour, cornstarch, baking powder, and salt in a bowl.
- Beat the butter and sugar until creamy, then mix in the eggs, milk, pistachio flavor, and food coloring.
- Fold in the dry mixture and pistachios, divide the batter among the liners, and bake for 18 to 20 minutes.
- Cool the cupcakes in the pan for 5 minutes, then transfer them to a rack to cool completely.
- Beat the frosting butter, cream, pistachio flavor, and powdered sugar until fluffy, then spread it over the cupcakes.
