Ingredients
- 1 3/4 cups cake flour (optional)
- 1 tsp baking powder
- 1/4 tsp baking soda
- 3/4 tsp salt
- 3 large eggs
- 1 1/4 cups granulated sugar
- 2 tsp lemon zest
- 1 cup extra virgin olive oil
- 1 cup whole milk
- 1 tbsp lemon juice
- powdered sugar (optional)
- nonstick cooking spray
Steps
- Heat the oven to 350 F and spray a 9-inch round cake pan with nonstick cooking spray.
- Whisk the flour, baking powder, baking soda, and salt in a bowl.
- Beat the eggs, sugar, lemon zest, olive oil, milk, and lemon juice in a second bowl.
- Stir the dry mixture into the wet mixture until just combined.
- Pour the batter into the pan and bake for 50 to 55 minutes, until a toothpick comes out clean.
- Cool the cake in the pan for 15 minutes, then cool it completely for about 45 minutes.
