- 2 lb small red potatoes
- 6 oz fresh green beans
- 4 hard-boiled eggs
- 1/3 cup grated parmesan cheese
- 4 tbsp toasted pine nuts
- 1/2 cup pesto
- 1/2 cup extra virgin olive oil
- 4 tbsp mayonnaise
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
Steps
- Cut the cooked, cooled potatoes and green beans into bite-size pieces.
- Chop the hard-boiled eggs and place them with the vegetables in a large bowl.
- Whisk the pesto, olive oil, mayonnaise, salt, and pepper in a separate bowl.
- Pour the dressing over the vegetables and eggs, then fold gently to coat.
- Stir in the Parmesan and pine nuts, then chill the salad for 30 minutes.
