Ingredients
- 2 large eggs
- 1 cup granulated sugar
- 1 tbsp real vanilla extract
- 1 1/2 lb ripe fuyu persimmon
- 10 tbsp unsalted butter
- 2 tsp baking soda
- 1/4 tsp fine sea salt
- 2 tsp cinnamon
- 1 1/2 cups walnut pieces
- 1 cup raisins
Steps
- Heat the oven to 350 F and grease two 9-by-5-inch loaf pans with cooking oil.
- Melt the butter in a small saucepan and let it cool slightly.
- Beat the eggs, sugar, vanilla, and persimmon pulp in a large bowl, then stir in the melted butter.
- Whisk the flour, baking soda, salt, and cinnamon separately, then stir them into the persimmon mixture.
- Fold in the walnuts and raisins, divide the batter between the pans, and bake for 45 to 50 minutes, until the centers are firm.
- Cool the loaves in the pans for 10 minutes before removing them.
