Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 12 tbsp unsalted butter
- 1 1/2 cups sugar
- 2 large eggs
- 1 1/2 cups creamy peanut butter
- 1 tsp vanilla extract
- 1 jar (13 oz) raspberry jam
- 1/2 cup salted peanuts
Steps
- Heat the oven to 350 F and line a 9-by-13-inch pan.
- Whisk the flour, baking powder, and salt in a bowl.
- Beat the softened butter and sugar until smooth, then beat in the eggs, peanut butter, and vanilla.
- Stir in the flour mixture until a soft dough forms.
- Press two-thirds of the dough into the pan, spread the jam over it, and crumble the remaining dough on top.
- Sprinkle with the peanuts and bake for 30 to 35 minutes, then cool completely before cutting.
