Ingredients
- 1 pastry for a 10-11 inch pie crust
- 6 peaches
- 8 oz sour cream
- 3 large egg yolks
- 1 cup sugar
- 1/4 cup all-purpose flour
- 1 tsp vanilla extract
- 4 tbsp cold unsalted butter
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1 1/2 tsp cinnamon
Steps
- Heat the oven to 400 F and fit the pastry into a 10- to 11-inch pie pan.
- Peel and slice the peaches, then spread them evenly across the crust.
- Whisk the sour cream, egg yolks, one cup sugar, one-quarter cup flour, and vanilla, then pour the mixture over the peaches.
- Rub the cold butter into the remaining flour, sugar, and cinnamon until coarse crumbs form.
- Sprinkle the crumbs over the pie and bake at 400 F for 15 minutes.
- Lower the oven to 350 F and bake for 35 to 40 minutes, until the custard is firm.
- Cool the pie for 15 minutes before cutting.
