Ingredients
- 1 french baguette
- olive oil (optional)
- 1 clove garlic
- 1 1/2 cups low-fat cottage cheese or sub ricotta cheese
- 1 lemon
- 2 1/2 large ripe peaches
- optional: 2 ounces prosciutto
- hot honey (optional)
- 1/2 cup shelled roasted pistachios
- julienned basil
- flaky sea salt (optional)
Steps
- Heat the oven to 425 F.
- Slice the baguette into thin pieces and arrange them on a baking sheet.
- Brush the slices with olive oil if using, then toast for 6 to 8 minutes.
- Rub the warm toasts with the garlic clove.
- Blend the cottage cheese with lemon juice and a little lemon zest until smooth.
- Spread the cheese on the toasts and top with peaches, basil, pistachios, prosciutto, hot honey, and flaky salt as desired.
