- 1 3/4 cups whole wheat flour
- 1/2 cup nine grain cereal
- 1 1/2 tbsp baking powder
- 1/2 tsp salt
- 1/3 cup brown sugar
- 1 large egg
- 2 1/2 tbsp fine molasses
- 1/3 cup apple sauce
- 1 cup milk
- 1 1/2 tsp vanilla
- 1 cup blueberries
Steps
- Heat the oven to 400 F and grease a 12-cup muffin pan with cooking oil.
- Whisk the flour, cereal, baking powder, salt, and brown sugar in a large bowl.
- Beat the egg, molasses, applesauce, milk, and vanilla in a second bowl.
- Stir the wet mixture into the dry mixture just until combined, then fold in the blueberries.
- Divide the batter among the muffin cups and bake for 18 to 20 minutes, until the centers are firm.
- Cool the muffins in the pan for 5 minutes before removing them.
