Ingredients
- 2 cans (28 oz) fat-free vegetable broth
- 1 cup water
- 1 bag (16 oz) frozen mixed vegetables
- 1 can (14 1/2 oz) no-salt-added stewed tomatoes
- 1/3 cup broken angel-hair pasta
- 1 can (15 oz) no-salt-added kidney beans
- 1 can (15 oz) no-salt-added black beans
- 1 tsp italian seasoning
- 1/2 tsp garlic powder
- 1/4 cup grated parmesan cheese
Steps
- Combine the vegetable broth, water, mixed vegetables, stewed tomatoes, Italian seasoning, and garlic powder in a large pot.
- Bring the mixture to a boil over high heat, then reduce the heat and simmer for 20 minutes.
- Stir in the kidney beans, black beans, and broken pasta, then simmer for 10 minutes, until the pasta is tender.
- Season with salt and pepper, then simmer for 5 more minutes.
- Stir in the Parmesan cheese and serve hot.
