Ingredients
- 3/4 cup sweet peas
- 3 ripe avocados
- 2 scallions
- 1 1/2 serrano chiles
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/4 cup fresh squeezed lime juice
- 2 tsp kosher salt
- 1 large white sweet potato
- 1 tbsp oil
- salt
Steps
- Heat the oven to 425 F.
- Slice the sweet potato into 1/8-inch rounds and toss with oil and salt.
- Bake the slices on a sheet pan for 20 to 25 minutes, turning halfway.
- Boil the peas in water for 2 minutes, then drain and cool.
- Mash the peas and avocados with scallions, serrano chiles, cilantro, mint, lime juice, and salt.
- Chill the guacamole for 10 minutes and arrange the sweet potato chips around it.
