Ingredients
- 1 packages (16 oz) pillsbury refrigerated sugar cookie dough
- 2 lb strawberries
- 1/2 cup water
- 1/3 cup sugar
- 1 1/2 tbsp cornstarch
- 1 pinch salt
- 3 tbsp strawberry gelatin
- 2 tsp lemon juice
- 1 cup heavy whipping cream
- 2 tbsp sugar
Steps
- Heat the oven to 350 F and coat 12 muffin cups with cooking oil.
- Divide the cookie dough among the cups, pressing it across the bottoms and slightly up the sides.
- Bake the crusts for 10 to 12 minutes, then cool them in the pan for 15 minutes.
- Whisk water, sugar, cornstarch, and salt in a saucepan over medium heat until thick, about 3 minutes, then stir in gelatin and lemon juice.
- Fold the sliced strawberries into the warm glaze, spoon the mixture into the crusts, and chill for 15 minutes.
- Whip the heavy cream with 2 tablespoons sugar, then spoon it over the chilled pies.
