Ingredients
- 1 tbsp vegetable oil
- 1/2 cup chopped white onion
- 1 large garlic clove
- 2 cups chopped tomato
- 1 chipotle pepper in adobo
- 1 tsp mexican oregano
- salt and pepper to taste (optional)
- 8 size corn tostadas
- 3/4 cups refried beans
- 2 cups shredded lettuce
- 1/2 cup queso fresco
- 1/2 cup mexican cream
Steps
- Heat the oil in a medium skillet over medium heat and cook the onion and garlic for 3 minutes.
- Add the tomatoes, chipotle pepper, oregano, salt, and pepper, and simmer for 8 minutes.
- Warm the refried beans in a small saucepan over low heat for 5 minutes.
- Spread the beans over the tostadas and spoon the chipotle tomato mixture on top.
- Finish each tostada with lettuce, queso fresco, and Mexican cream.
