- extra virgin olive oil
- 10 oz frozen spinach
- 1 tbsp garlic powder
- 4 oz garlic hummus
- 1/2 cup breadcrumbs
- 1/2 cup parmesan cheese
- 1 tbsp parsley flakes
Steps
- Heat the oven to 425 F and warm a large baking sheet for 5 minutes.
- Slice the eggplant into thick steaks, brush both sides with oil, and season with salt and pepper.
- Roast the eggplant on the baking sheet for 8 minutes.
- Cook the frozen spinach with garlic powder in an oiled skillet over medium heat for 5 minutes.
- Spread hummus over the eggplant, add spinach, breadcrumbs, Parmesan, and parsley, then roast for 7 minutes.
