Ingredients
- 1/2 lb linguine or pasta of choice
- 2 tbsp extra virgin olive oil
- 3 cloves garlic
- 5 oz baby spinach
- salt and pepper
- 1/3 cup chopped/crumbled feta
- 1 lemon
- 1 lemon
- 1 pint cherry tomatoes
- fresh basil leaves for garnish (optional)
Steps
- Boil the pasta in salted water according to the package timing, then drain it.
- Heat the olive oil in a large skillet over medium heat and cook the garlic and tomatoes for 4 minutes.
- Add the spinach, salt, and pepper, then cook for 2 minutes until the spinach wilts.
- Toss the drained pasta, lemon juice, and lemon zest into the skillet.
- Top with feta and basil before serving.
