3 tbsp cornstarch
1/4 tsp salt
1 1/2 cups water
2 lemons
2 tbsp butter
4 egg yolks
1 pie crusts
4 egg whites
1/4 cup white sugar
1/4 tsp cream of tartar

Steps

Heat the oven to 350 F and place the pie crust in a pie dish.
Whisk the sugar, flour, cornstarch, and salt in a saucepan, then whisk in the water.
Cook the mixture over medium heat, stirring constantly, until thick and bubbling for 3 to 5 minutes.
Whisk the lemon juice, lemon zest, butter, and egg yolks into the hot filling, then cook for 2 minutes until thickened.
