Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2/3 cup granulated sugar
- 3 eggs
- 1 cup granulated sugar
- 1/3 cup cornstarch
- 6 egg yolks
- 1 1/2 cups water
- 2 lemons
- 1 tbsp butter
- 4 egg whites
- 1/2 tsp cream of tartar
- 1/3 cup granulated sugar
Steps
- Heat the oven to 350 F and mix the graham crumbs, melted butter, and 2 tablespoons sugar.
- Press the crumbs into a 9-inch springform pan and bake for 10 minutes.
- Whisk the eggs, egg yolks, sugar, cornstarch, water, lemon juice, lemon zest, and salt in a saucepan.
- Cook the filling over medium heat for 8 to 10 minutes, stirring constantly until thick, then stir in 1 tablespoon butter.
- Pour the lemon filling into the crust and beat the egg whites with cream of tartar until soft peaks form.
- Beat in the remaining sugar until firm peaks form, spread the meringue over the filling, and bake for 10 to 12 minutes.
