- 1 lb boneless skinless chicken breast
- 1 cup crumbled feta cheese
- 1/2 tsp dried oregano
- 1 tbsp fresh squeezed lemon juice
- 1 tbsp oil
- salt and pepper
- 1 cup chicken broth
- 1/2 cup fresh tomato
- 1 cup fresh spinach
Steps
- Heat the oven to 400 F and cut a pocket into each chicken breast portion.
- Mix feta, oregano, lemon juice, salt, and pepper, then fill the chicken pockets.
- Heat oil in a large oven-safe skillet over medium-high heat and brown the chicken for 3 minutes per side.
- Add chicken broth, tomato, and spinach around the chicken, then bring the broth to a simmer.
- Bake the skillet for 18 to 20 minutes, until the thickest chicken portion reaches 165 F.
