Ingredients

1 tbsp extra virgin olive oil
1 whole lemon
2 tbsp fresh parsley (optional)
2 tbsp pine nuts
1/4 cup freshly grated parmesan (optional)
to taste kosher salt and fresh ground pepper (optional)

Steps

Toast the breadcrumbs and pine nuts in a large dry skillet over medium heat for 3 to 4 minutes, then set them aside.
Boil the linguine in a large pot of salted water, adding the broccoli during the last 4 minutes.
Reserve 1 cup pasta water, drain the linguine and broccoli, and return them to the pot.
Mix the ricotta, lemon zest, lemon juice, olive oil, salt, and pepper in a bowl.
Stir the ricotta mixture into the pasta, adding pasta water gradually until creamy.
Top with the toasted breadcrumbs, pine nuts, parsley, and parmesan if using.
