Ingredients
- 1/2 cup whole wheat flour
- 1/2 cup unbleached all-purpose flour
- 3/4 tsp salt
- 1/2 tsp thyme
- 1/2 tsp rosemary
- 1/2 tsp oregano
- 4 tbsp butter
- 4 tbsp water
- 1 tbsp lemon juice
- 2 egg beaten with 2 tbsp water
- 2 slices cooked ham
- 1 small red onion
- 1/4 lb thin asparagus spears
Steps
- Heat the oven to 400 F and grease a 9-inch tart pan with cooking oil.
- Mix both flours, salt, thyme, rosemary, and oregano, then cut in the butter and stir in water and lemon juice.
- Press the dough into the tart pan and bake for 10 minutes.
- Slice the onion, trim the asparagus, and cut the ham into small pieces.
- Whisk the eggs with 2 tablespoons water, then add the ham, onion, and asparagus.
- Pour the egg mixture into the crust and bake for 20 minutes until the eggs are firm.
