- 3 lb bone-in
- 2 tsp kosher salt
- 2 large egg whites
- chopped cilantro leaves (optional)
- sesame seeds (optional)
- chopped green onions (optional)
- 1/3 cup brown sugar
- 1/3 cup low-sodium soy sauce or tamari
- 1 tbsp gochujang or sambal oelek
- 1 tbsp toasted sesame oil
- 1 tbsp rice vinegar
- 1 tbsp fish sauce
- 2 tbsp minced garlic
Steps
- Heat the oven to 425 F and line a large baking sheet with parchment.
- Whisk the egg whites with salt, coat the wings, and arrange them on the sheet.
- Bake the wings for 40 minutes, turning them halfway, until they reach 165 F.
- Simmer the brown sugar, soy sauce, gochujang, sesame oil, vinegar, fish sauce, and garlic in a small saucepan for 5 minutes.
- Toss the baked wings with the sauce and bake them for 5 more minutes.
- Sprinkle with cilantro, sesame seeds, or green onions if using.
