Ingredients
- 1 16- ounce block low-moisture mozzarella cheese
- 3 eggs
- 1/4 cup flour
- 1 cup italian breadcrumbs
- 1 whole peeled san marzano tomatoes
- 1/4 cup extra-virgin olive oil
- 4 cloves garlic
- 1 tbsp tomato paste
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 2 sprigs fresh basil
- canola oil (optional)
Steps
- Cut the mozzarella into sticks, whisk the eggs in one bowl, and place the flour and breadcrumbs in separate bowls.
- Coat each cheese stick in flour, egg, and breadcrumbs, then freeze them for 60 minutes.
- Crush the tomatoes into a saucepan with olive oil, garlic, tomato paste, salt, pepper, and basil, then simmer for 15 minutes.
- Heat 2 inches of oil in a deep skillet to 350 F.
- Fry the frozen mozzarella sticks in batches for 1 to 2 minutes, turning once, until golden.
- Drain the sticks on paper towels and serve them with the warm tomato sauce.
