Ingredients
- 2 cups rice
- 380 g coconut milk
- 450 g kidney beans
- 1 cup water
- 2 tsp kosher salt
- 1/2 tsp ground allspice
- 1/4 tsp black pepper
- 3 spring onions
- 2 sprigs thyme
- 1 scotch bonnet
Steps
- Rinse the rice under cold water until the water runs mostly clear.
- Combine the rice, coconut milk, water, kidney beans, salt, allspice, pepper, spring onions, thyme, and Scotch bonnet in a large pot.
- Bring the pot to a boil over medium-high heat.
- Cover, reduce the heat to low, and simmer for 20 minutes.
- Turn off the heat and let the covered rice rest for 10 minutes before fluffing.
