Ingredients

1 lb shrimp
2 chopped scotch bonnet
1 tbsp all-purpose seasoning
2 tsp ground annatto
2 tsp allspice
3/4 cup shrimp stock
1/4 cup onion
2 cloves minced garlic
2 tbsp white vinegar
3 sprigs thyme
to taste salt (optional)

Steps

Heat cooking oil in a large skillet over medium heat.
Cook the onion, garlic, scotch bonnet, annatto, allspice, and seasoning for 3 minutes.
Pour in the shrimp stock and vinegar, add thyme, and simmer for 15 minutes.
Add the shrimp and cook for 5 minutes, turning once, until opaque and 145 F.
Season with salt and pepper, then rest the skillet for 2 minutes before serving.
