Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 cup whole wheat flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 3/4 tsp salt
- 1/3 cup granulated sugar
- 2 tsp caraway seeds
- 1 large egg
- 6 tbsp unsalted butter
- 1 1/3 cups currants
- 1 1/2 tbsp turbinado or sparkling white sugar (optional)
Steps
- Heat the oven to 400 F and grease a 12-cup muffin pan.
- Whisk the flours, baking powder, baking soda, salt, sugar, and caraway seeds in a bowl.
- Whisk the egg, buttermilk, and melted butter in another bowl.
- Stir the wet mixture into the dry mixture until just combined, then fold in the currants.
- Divide the batter among the muffin cups and sprinkle with the sparkling sugar if using.
- Bake for 18 to 20 minutes, until firm and a tester comes out clean, then cool for 5 minutes.
