The amounts listed are small for a full dinner, so this price per serving is likely low. Plan on a side or a bigger portion.

Ingredients

  • 2 lb boneless skinless chicken thighs
  • 2 tbsp honey
  • 2 tbsp garam masala
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp cumin
  • 2 tsp salt
  • 2 tsp turmeric
  • 1/2 tsp ground ginger
  • 1/2 tsp cayenne pepper
  • 14 ounce can coconut milk
  • 2 cups rice

Steps

  1. Mix the honey, garam masala, chili powder, garlic powder, cumin, salt, turmeric, ginger, and cayenne.
  2. Coat the chicken thighs with the spice mixture and place them in the Instant Pot.
  3. Add the rice, coconut milk, and enough water to make 3 1/2 cups total liquid, without stirring the chicken into the rice.
  4. Cook on high pressure for 8 minutes, then let the pressure release naturally for 10 minutes.
  5. Release the remaining pressure, check that the chicken reaches 165 F, and fluff the rice before serving.
