Ingredients
- 3 oz semi sweet chocolate
- 1 1/2 cups hot brewed coffee
- 3 cups sugar
- 2 1/2 cups all-purpose flour
- 1 1/2 cups unsweetened cocoa powder
- 2 tsp baking soda
- 3/4 tsp baking powder
- 1 1/4 tsp salt
- 3 large eggs
- 3/4 cup vegetable oil
- 1 1/2 cups buttermilk
- 3/4 tsp vanilla
Steps
- Heat the oven to 350 F and line a 12-cup muffin pan with paper liners.
- Pour the hot coffee over the chocolate and stir until smooth.
- Whisk the sugar, flour, cocoa, baking soda, baking powder, and salt in a large bowl.
- Beat in the eggs, oil, buttermilk, vanilla, and chocolate coffee mixture until just combined.
- Divide the batter among the liners and bake for 18 to 20 minutes, until a tester comes out clean.
- Cool the cupcakes in the pan for 5 minutes, then transfer them to a rack.
