Ingredients
- 3 1/2 lb sirloin tip roast
- 1/2 lemon
- 1 tbsp olive oil
- 2 cloves garlic
- 1 tbsp oregano
- 2 tsp salt
- 1 tsp thyme
- 1 tsp paprika
- 1/2 tsp ground black pepper
- 1 cup tzatziki sauce
- 1 1/2 tbsp fresh horseradish root
- 1/4 tsp white sugar
Steps
- Heat the oven to 350 F and place the roast in a roasting pan.
- Mix lemon juice, olive oil, garlic, oregano, salt, thyme, paprika, and pepper, then rub it over the roast.
- Roast for 85 minutes, checking until the thickest part reaches 145 F.
- Mix the tzatziki, horseradish, and sugar in a small bowl while the roast cooks.
- Rest the roast for 20 minutes before slicing and serving with the sauce.
