Steps

Heat the oven to 350 F and grease 9 cups of a 12-cup muffin pan with cooking oil.
Whisk the eggs, maple syrup, almond milk, melted coconut oil, vanilla, and vinegar in a large bowl.
Stir in the oat flour, almond flour, cinnamon, baking soda, and salt until combined.
Fold in the chocolate chips and divide the batter among the 9 prepared cups.
Bake for 20 to 22 minutes, until the tops are firm and no wet batter remains.
