Ingredients
- 400 g butter beans
- 3 tbsp olive oil
- 1 chopped onion
- 2 clove chopped garlic
- 2 tbsp tomato puree
- 800 g tomatoes
- 1 tbsp sugar
- 1 tbsp dried oregano
- 1 pinch cinnamon
- 2 tbsp chopped parsley
Steps
- Heat the oven to 375°F and drain the butter beans.
- Heat the olive oil in a large ovenproof skillet over medium heat, then cook the onion and garlic for 5 minutes.
- Stir in the tomato puree, tomatoes, sugar, oregano, cinnamon, salt, and pepper.
- Simmer the sauce for 10 minutes, then fold in the butter beans.
- Bake uncovered for 20 minutes until the sauce is thick and bubbling.
- Stir in the chopped parsley before serving.
