- 10 oz 60% bittersweet chocolate chips
- 1 cup 2 sticks butter
- 1/4 cup brewed coffee
- 2 tsp instant espresso powder
- 1 tsp vanilla
- 1 cup sugar
- 1/2 tsp kosher salt
- 3 eggs
- 1 1/2 cups flour
- 1 tsp baking powder
- 3 egg yolks
- 1 cup evaporated milk
- 1 cup sugar
- 1/2 cup 1 stick butter
- 1 tsp vanilla
- 1 1/2 cup toasted coconut
- 3/4 cup toasted pecans
Steps
- Heat the oven to 350 F and line a 9-inch square pan with parchment.
- Melt chocolate chips and 1 cup butter together, then stir in coffee, espresso powder, and vanilla.
- Whisk 1 cup sugar, salt, and 3 eggs into the chocolate mixture, then stir in flour and baking powder.
- Spread the batter in the pan and bake for 25 to 30 minutes, until the center is set.
- Cook evaporated milk, the remaining sugar, remaining butter, vanilla, and egg yolks in a saucepan over medium-low heat for 8 to 10 minutes, stirring until thick.
- Stir in toasted coconut and pecans, spread the topping over the warm brownies, and cool for 15 minutes.
