1/2 tbsp salt
1 1/2 tbsp sugar
2 tsp active dry yeast
3/4 cup whole wheat flour
3/4 cup rye flour

2 tbsp canola oil plus more to grease the counter and pan
4 cloves garlic
2 tbsp water
1 tsp salt
7 strips bacon
4 tbsp olive oil

Steps

Stir the warm water, salt, sugar, and yeast in a large bowl, then let it stand for 5 minutes.
Add the flours and 2 tablespoons canola oil, knead for 10 minutes, and let the dough rise covered for 3 hours 15 minutes.
Divide the dough into 15 balls, arrange them in an oiled 9-by-13-inch pan, and let them rise for 1 hour.
Heat the oven to 400 F and bake the rolls for 25 to 30 minutes, until golden.
Cook the bacon in a skillet over medium heat for 8 to 10 minutes, until crisp, then crumble it.
Crush the garlic with 2 tablespoons water, 1 teaspoon salt, and the olive oil; brush it over the hot rolls, add bacon, and cool for 15 minutes.
