- 6 carrots
- 1 head cauliflower
- 2 tbsp olive oil
- 4 tsp cumin
- 1 jars (12 oz) sun-dried tomatoes
- 3 big pieces of garlic naan
- 11 pieces easy 5 ingredient baked falafel
- 1 batch of magic green sauce
- 1 handful cilantro leaves
Steps
- Heat the oven to 425 F and line a large baking sheet.
- Cut the carrots and cauliflower into bite-size pieces, then toss with olive oil and cumin.
- Roast the vegetables for 25 to 30 minutes, stirring halfway, until tender and browned.
- Warm the naan and baked falafel during the last 5 minutes of roasting.
- Fill each naan with roasted vegetables, falafel, sun-dried tomatoes, green sauce, and cilantro.
