- 1/2 cup butter
- 5/8 cups sugar
- 3 large eggs
- 1/2 tsp vanilla extract
- 1/2 tsp rum extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 cup eggnog
- 1/4 cup all-purpose flour
- 1/4 tsp salt
- 3/4 cups eggnog
- 1 cup butter
- 3/4 cups confectioners' sugar
- 3/4 tsp vanilla extract
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan.
- Beat the butter and sugar in a large bowl, then beat in the eggs, vanilla extract, and rum extract.
- Whisk the flour, baking powder, and salt in another bowl, then mix them into the batter with the eggnog.
- Spread the batter in the pan and bake for 30 minutes, until set in the center and cooked through.
- Cook the flour, salt, and eggnog in a saucepan over medium heat for 4 minutes, then cool the mixture for 10 minutes.
- Beat the butter, confectioners' sugar, and vanilla extract, blend in the cooled mixture, and spread the frosting over the cooled cake.
