- 1 cup all purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp kosher salt
- wet ingredients
- 1/2 cup good-quality extra-virgin olive oil
- 3/4 cup packed dark brown sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 tsp espresso powder (optional)
- 3/4 cup semi-sweet or dark chocolate chips
- flaky sea salt (optional)
Steps
- Heat the oven to 350 F and lightly oil a baking sheet.
- Whisk the flour, cocoa powder, baking soda, salt, and espresso powder in a bowl.
- Whisk the olive oil, brown sugar, egg, and vanilla in a second bowl.
- Stir the dry mixture into the wet mixture, then fold in the chocolate chips.
- Scoop 10 portions onto the baking sheet and bake for 10 to 12 minutes, until the edges are set.
- Cool the cookies on the sheet for 5 minutes and sprinkle with flaky sea salt if using.
