Ingredients
- 2 tsp olive oil
- 1 brown onion
- 2 cloves garlic
- 8 pieces chicken drumsticks
- 2 cups broccoli florets
- 1 cup mushrooms
- 1 large ripe tomato
- 15 oz can condensed tomato soup
- 1 tbsp tomato paste
- 8 4/5 oz reduced fat or fat free cream cheese

Steps
- Heat the olive oil in a large covered skillet over medium heat and brown the drumsticks for 8 minutes.
- Add the onion and garlic, then cook for 3 minutes until softened.
- Stir in the tomato, tomato soup, and tomato paste.
- Add the broccoli and mushrooms, cover, and simmer for 15 minutes.
- Stir in the cream cheese and cook for 4 minutes, until the chicken reaches 165 F and the sauce is smooth.
