- 4 lb 14 count chicken legs or drumsticks
- 1/4 cup olive oil
- 4 cloves garlic
- 4 tbsp fresh parsley
- 3 tbsp lemon juice from 1 large lemon
- 2 tbsp dijon mustard
- 2 tsp fine sea salt
- 1/2 tsp black pepper
Steps
- Whisk the olive oil, garlic, parsley, lemon juice, mustard, salt, and pepper in a large bowl.
- Coat the chicken legs with the marinade, cover the bowl, and refrigerate for 6 hours.
- Heat the oven to 425 F and arrange the chicken legs on a large rimmed baking sheet.
- Roast the chicken for 45 to 50 minutes, turning the pieces halfway through.
- Check that the thickest pieces reach 165 F before removing them from the oven.
