Ingredients
- 1 lb corned beef
- 1 1/2 cup kidney beans
- 1 scotch bonnet
- 2 scallions
- 1/4 tsp thyme
- 1 clove finely chopped garlic
- 2 cups water
- 3 cups coconut milk
- 2 bay leaf
- 6 allspice
- 2 cloves garlic
Steps
- Cut the corned beef into bite-size pieces and place it in a large pot.
- Add the water, coconut milk, bay leaves, allspice, both garlic cloves, thyme, and the whole scotch bonnet.
- Bring the pot to a gentle boil, then simmer uncovered for 25 minutes.
- Stir in the kidney beans and cook for 10 minutes until the beef reaches 160 F.
- Remove the bay leaves, allspice, and scotch bonnet, then stir in the scallions.
