Ingredients
- 8 5/6 oz dairy-free dark chocolate
- 4 1/4 oz unsalted vegan butter
- 2 tbsp maple syrup
- 7 oz biscoff speculoos cookies
- 1 1/2 cup vegan marshmallow
- 1/2 cup dried cranberries
- 1/2 cup salted roasted pistachios
- 2 tbsp salted roasted pistachios
- 2 tbsp freeze-dried cranberries
Steps
- Line an 8-inch square pan with parchment.
- Melt the dark chocolate, vegan butter, and maple syrup in a heatproof bowl over barely simmering water for 5 minutes.
- Break the cookies into bite-size pieces and stir them into the chocolate mixture with the marshmallows, dried cranberries, and half the pistachios.
- Press the mixture firmly into the pan and scatter the remaining pistachios and freeze-dried cranberries over the top.
- Chill the rocky road for 3 hours, then cut it into pieces.
