- 1 1/2 tsp baking soda
- 1 tsp instant coffee or espresso powder
- 1/2 tsp each: kosher salt & ground cinnamon
- 1/2 cup unsalted butter
- 1 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup full-fat greek yogurt
Steps
- Heat the oven to 400 F and grease a 12-cup muffin pan with oil.
- Whisk the flour, cocoa, baking soda, coffee, salt, and cinnamon in a medium bowl.
- Melt the butter and cool it for 5 minutes.
- Whisk the butter, sugar, buttermilk, eggs, vanilla, and yogurt in a large bowl.
- Fold the dry mixture into the wet mixture until barely combined.
- Fold in the chocolate pieces, divide the batter among the cups, and add extra pieces if using.
- Bake for 16 to 18 minutes until the muffins spring back when lightly pressed.
