1/2 cup olive oil
2 tbsp red wine vinegar
1/2 cup finely chopped parsley
3 1/2 cloves garlic
1 red chili
3/4 tsp dried oregano
1 tsp coarse salt
1/2 tsp ground black pepper
3 oz butter
4 lobster tails

Steps

Stir the olive oil, vinegar, parsley, minced garlic, chopped chili, oregano, salt, and pepper in a bowl.
Heat the oven to 425 F and place the lobster tails shell-side up on a rimmed baking sheet.
Cut each shell lengthwise, loosen the meat, and lift it slightly over the shell.
Melt the butter, brush it over the lobster meat, and bake for 12 to 18 minutes, until the thickest part reaches 145 F.
Spoon the chimichurri over the hot lobster tails and rest them for 5 minutes.
