Ingredients
- 1 can (14 oz) chickpeas
- 2 stalks celery
- 3 green onions
- 1/4 cup finely chopped dill pickle
- 1/4 cup finely chopped red bell pepper
- 3 tbsp store-bought or homemade vegan mayonnaise
- 1 clove garlic
- 1 1/2 tsp yellow mustard
- 2 tsp minced fresh dill (optional)
- 2 1/4 tsp fresh lemon juice (optional)
- 1/4 tsp fine sea salt (optional)
- freshly ground black pepper
Steps
- Drain and rinse the chickpeas, then pat them dry.
- Chop the celery, green onions, pickle, red pepper, and garlic.
- Mash the chickpeas lightly in a medium bowl.
- Stir in the vegetables, mayonnaise, mustard, dill, lemon juice, salt, and pepper.
- Chill or serve the salad after fifteen minutes of preparation.
