Ingredients
- 1 cans (15 oz) chickpeas
- 1 head cauliflower
- 1 large sweet potato
- 2 tbsp extra virgin olive oil
- kosher salt and freshly ground black pepper (optional)
- 1 batch almond curry sunshine dressing
Steps
- Heat the oven to 425 F and line a large baking sheet with oil.
- Cut cauliflower and sweet potato into bite-size pieces and spread them on the baking sheet.
- Toss the vegetables with olive oil, salt, and pepper.
- Roast for 25 to 30 minutes, turning once, until tender and browned.
- Warm the chickpeas in a small saucepan over medium heat for 5 minutes.
- Divide the roasted vegetables and chickpeas among bowls and drizzle with almond curry dressing.
