Ingredients
- 2 cups japanese short or medium grain rice
- 2 1/2 cups cold water
- 5 tbsp sushi vinegar
- 4 tbsp rice vinegar
- 2 tbsp sugar
- 2 tsp salt
- 1/2 lb imitation crab meat
- 1 avocado
- 1/2 cucumber
- toasted nori seaweed
- toasted sesame seeds
- soy sauce
- wasabi paste or wasabi powder
Steps
- Rinse the rice until the water runs mostly clear.
- Combine the rice and cold water in a covered pot and simmer for 20 minutes.
- Rest the covered rice for 10 minutes, then fold in the sushi vinegar, rice vinegar, sugar, and salt.
- Slice the imitation crab, avocado, and cucumber into thin strips.
- Place nori on a rolling mat, spread on rice, and add crab, avocado, cucumber, and sesame seeds.
- Roll each sheet tightly and slice into pieces.
- Serve the rolls with soy sauce and wasabi.
